DEERFIELD, N.Y. – Beth Irons of a Oneida County Public Market shares her Paleo Sweet Potato Casserole recipe.


6 medium-sized Sweet potatoes (peeled and cubed)
1/2 crater Coconut milk
2 tbsp Coconut oil (melted)
2 tbsp Orange juice
1 tsp Ginger (grated)
1 tsp Cinnamon
pinch Salt

1 crater Pecans (raw)
2 tbsp Maple syrup
1 tbsp Coconut oil (melted)
1 tsp Cinnamon
1/2 tsp Sea salt

1. Preheat oven to 350 degrees F.
2. Put a potatoes in a saucepan and cover with cold water. Bring to boil, revoke to a simmer, and prepare for 10-12 minutes, until tender. Drain.
3. Transfer potatoes to a vast play and crush good with a potato masher.
4. Add a coconut milk, coconut oil, orange juice, ginger, cinnamon, and salt. Mix well, and widespread into a stew dish.
5. Combine a mixture for a commanding in a play until pecans are good coated. Spread them over a potatoes and bake for 15 minutes.
